Traditional German side dish to accompany tourtière this holiday season

Prepare your holiday meal with some inspiration from Leah Kirchmann who has kindly shared with Canadian Cycling Magazine four of her favourite festive recipes. Rotkohl is a traditional German side dish prepared with red cabbage and enjoyed with other traditional German meat dishes.

Rotkohl is a family favourite holiday side dish that pairs well with tourtiere. This recipe originates from my German heritage.

Ingredients

2 tbsp butter
1 medium red cabbage, sliced thinly
1 small red onion, sliced thinly
2 apples, peeled and chopped
3 cloves
1 bay leaf
1 tsp sugar
1/4 tsp salt
1 cup water
1/4 cup apple cider vinegar
Dash of pepper

Directions

1. Melt butter in a pot over medium heat, add onion and cook until translucent.

2. Add cabbage and cook for five minutes.

3. Add apples, cloves, bay leaf, sugar, salt, water, apple cider vinegar and pepper to the pot. Simmer covered for 45 minutes. Adjust seasoning to taste before serving.
